Ingredients :

  • 1 block of firm tofu (about 14 oz)
  • 2 tablespoons of cornstarch
  • Salt and pepper to taste
  • 2 tablespoons of vegetable oil
  • 4 cups of chopped vegetables of your choice (such as broccoli, carrots, mushrooms, peppers or zucchini)
  • 8 oz of noodles of your choice (such as rice noodles, soba noodles or spaghetti)
  • 1/4 cup of sauce of your choice (such as soy sauce, teriyaki sauce or peanut sauce)
  • Sesame seeds and chopped scallions for garnish (optional)

Directions:

  1. Cut the tofu into bite-sized pieces and pat them dry with paper towels. Sprinkle the cornstarch over the tofu and toss to coat. Season with salt and pepper.
  2. Heat the oil in a large skillet over high heat. Add the tofu and fry for about 15 minutes, turning occasionally, until golden and crisp on all sides. Transfer to a plate and keep warm.
  3. In the same skillet, add the vegetables and stir-fry for about 10 minutes, until crisp-tender. You may need to add some water if the pan gets too dry.
  4. Meanwhile, cook the noodles according to the package directions. Drain and rinse under cold water.
  5. Add the sauce to the skillet and bring to a boil. Reduce the heat and simmer for about 5 minutes, until slightly thickened.
  6. Add the noodles and toss to combine. Serve hot or cold, topped with the tofu, sesame seeds and scallions if desired.
