Ingredients :
- 1 block of firm tofu (about 14 oz)
- 2 tablespoons of cornstarch
- Salt and pepper to taste
- 2 tablespoons of vegetable oil
- 4 cups of chopped vegetables of your choice (such as broccoli, carrots, mushrooms, peppers or zucchini)
- 8 oz of noodles of your choice (such as rice noodles, soba noodles or spaghetti)
- 1/4 cup of sauce of your choice (such as soy sauce, teriyaki sauce or peanut sauce)
- Sesame seeds and chopped scallions for garnish (optional)
Directions:
- Cut the tofu into bite-sized pieces and pat them dry with paper towels. Sprinkle the cornstarch over the tofu and toss to coat. Season with salt and pepper.
- Heat the oil in a large skillet over high heat. Add the tofu and fry for about 15 minutes, turning occasionally, until golden and crisp on all sides. Transfer to a plate and keep warm.
- In the same skillet, add the vegetables and stir-fry for about 10 minutes, until crisp-tender. You may need to add some water if the pan gets too dry.
- Meanwhile, cook the noodles according to the package directions. Drain and rinse under cold water.
- Add the sauce to the skillet and bring to a boil. Reduce the heat and simmer for about 5 minutes, until slightly thickened.
- Add the noodles and toss to combine. Serve hot or cold, topped with the tofu, sesame seeds and scallions if desired.
